We are up and running at last...... Tonight at the If I Can Dream house the guys loved my simple healthy chicken, broccoli, and jasmine rice. ITS SOOOOO EASY!
Susan's Thai Chili Chicken.
-6 Medium free range skinless chicken breasts (can sub thighs)
-Bottle thai sweet chili sauce
-Jar orange marmalade
-2 Tablespoons lite soy sauce
-5 Cloves garlic minced
-2 Tablespoons minced fresh ginger
Pre heat oven to 350. Place chicken in an oven proof dish. Mix all ingredients in a bowl and pour over chicken. Cover in foil and bake for 40 min. The final ten min of cooking remove foil and spoon juices over the chicken. Take chicken out of the oven and let rest for five min before
slicing and serving.
-One large head of broccoli cut into small pieces
-1 Tablespoon toasted sesame seeds
-2 Teaspoons sesame oil.
Bring a large pot of water to boil. Place broccoli in boiling water for two min, drain and toss with sesame seeds and sesame oil.
